Light roasts retain most of the characteristics of the original coffee
The light roasts have a light brown color, toasted, color and lack of oil in the roasted grains. They have the highest acidity and are the brightest of the three levels of roast beef.
Light baked goods are sometimes called Half City, Light City, New England or Cinnamon.
Acidity and medium toasted balance body.
A medium roast will have a brown color darker than a light roast and will get richer. Some of the coffee oils may also be visible in the beans.
Middle roasts go by town, breakfast, regular and American roasts.
Dark roasts display bold bodies and a richer flavor.
Dark roasts are dark brown, sometimes almost black, in color. They look like chocolate if they were shaped like a coffee bean. The oils can be seen in the grains at this time.
In a Dark Roast, the coffee beans are roasted a few minutes longer than a Dark-Medium Roast, until the beans begin to smoke when the sugars begin to char.
Some origins will be better developed in a dark roast than others, due to the composition of chlorogenic acids and other compounds in coffee, which vary based on soil conditions and climate.

People always ask us for recommendations on what beans they will like. Coffee preferences in recent years have changed, but with that change, we have seen many different styles of toasting reaching the market for consumers, generally without much explanation for consumers.
Today, we are going to help you shed some light on a subject that largely governs what you will actually be able to taste in your coffee, which is the degree of toast or color of roast meat, as is often known. To begin, see the chart below the Falcon Coffees Expert team (a highly renowned green coffee importer in the UK). It shows the progression of a roasted coffee over time with a general curve, and will give you an idea of what we started talking about below about the roasting process.
